FOR THE FIRST TIME IN 15 YEARS, CANADA TO TAKE PART IN THE 2022 WORLD PASTRY CUP THIS JULY

Montreal, June 30, 2022 — Chefs Canada is thrilled to announced that for the first time since 2007, Canada will be represented at the World Pastry Cup, the most prestigious stage for pastry art on the planet. As the sweet counterpart of the Bocuse d’Or, the competition is a window into the latest trends and techniques, showcasing the best creative minds from around the world competing for a chance to win the title of World Pastry Champ.

Adding to its roster of culinary athletes, Chefs Canada, the organization managing Bocuse d’Or Team Canada, in collaboration with l’ITHQ and some of Quebec’s top pastry chefs including Christophe Morel, Roland Delmonte and Michael Cotard, have secretly been training the newly formed team at The Bocuse d’Or Training Centre in Montreal to compete at the upcoming continental selection taking place in Santiago, Chile, on July 13.

Our National culinary Team is composed of:

  • Team Captain, Chef Alexandrine Grégoire-Guindon: A graduate and teacher at ITHQ since 2019, she is known in La Belle Province for her work at Pâtisserie Rhubarbe, Butterblume and La Finca café. The chocolate specialist has rubbed shoulders with the big names of the biggest mentors in Montreal’s pastry world.
  • Sugar expert, Chef Patrick Bouilly: This is a dream come true for Bouilly who started his career in Paris more than thirty years ago. He is a wealth of knowledge and resources for many of Quebec’s professionals who are looking for innovative desserts and in demand for high profile events including Montréal en Lumière and the gala for Les Grands Chefs Relais & Châteaux.
  • Team President, Chef Daniel Garcia: After more than 20 years as a pastry chef and owner, Daniel Garcia is now sharing his experience as the coordinator of professional training at ITHQ. Originally from Mexico, chef Garcia found his passion for pastry before heading to France to perfect his skills at the Ferrandi school of French Cuisine under the expert eye of Pierre Hermé.

“I am excited to be part of the rebirth of World Pastry Cup Team Canada,” explains Chef Daniel Garcia, Team President and member of the Jury at the competition. “Canada is a country rich in passion and expertise when it comes to all things sweet. While pastry chefs from coast to coast take advantage of the busy tourist season to restart their businesses post covid, we will do our very best to shine a bright light on the spectacular pastry chefs we have here in Canada!”

About the competition

The competition was created by the legendary Chef Gabriel Paillasson over 30 years ago. Currently chaired by Pierre Hermé, it brings together teams from all over the world, to first compete on one of the five continents to win their spot amongst the best of the best in Lyon (France) every two years.

On July 13 in Santiago (Chile), our pastry experts will battle seven other teams from across North and South America for one of three chances to move forward to Lyon in January 2023. They will have five hours to create a chocolate dessert, a frozen dessert, an individual size restaurant style dessert, a chocolate as well as a sugar sculpture.

“It’s time that Canada claims its spot on the world stage of gastronomy,” explains Thomas Delannoy, President of Chefs Canada. “There’s so much talent in all the various fields of the culinary arts, at Chefs Canada we are dedicated to cheering and supporting the industry by giving it the bragging rights we deserve abroad.”
